Fish in Foil with Tomatillo Salsa

INGREDIENTS:

  • Snapper or cod
  • Asparagus
  • Spinach
  • Onion
  • Capers
  • Lime juice
  • Olive oil
  • Dill
  • Salt 
  • Friends n Family Tomatillo Salsa

We love this dish, because it is super easy, fast and absolutely delicious. It is a good way to clean the fridge too:) You can add any vegetables you have. We like snapper or cod for this preparation, but truly any fish would be great. Place your aluminum foil with the shiniest side down. Add your fish, sprinkle olive oil, lime juice, salt, add thinly sliced onion, capers, spinach, asparagus. Add few spoons of Tomatillo salsa and dill. Close the foil and bake for 20 min at 350 F. Serve with brown or white rice. Save the liquid that is a foil to add on top of the fish once served- it's super tasty. Add more Tomatillo salsa if desired. We love to pair this dish with Chablis, Sancerre or Grüner Veltliner.
