Pasta with Shrimp and Smoky Morita Salsa
INGREDIENTS:
- 1/3 Medium Onion
- 1 Garlic Clove
- Half Cup Kalamata olives
- Cup Vegetable stock
- Spinach
- Tomatoes
- Goat's Feta
- Pasta of Your Choice
- Friends n Family Smoky Morita Salsa
This is super easy recipe and fast to prepare. Choose your favorite noodles and add to boiling water with salt. Wash your shrimp and pat dry with paper towel. In the pan add olive oil and sauté onion with garlic. Add vegetable stock and half jar of smoky morita salsa. If you like less spicy you can combine moky morita with tomato puree. Add cherry tomatoes, kalamata olives and shrimp. Season with salt and pepper. Shrimp will cook fast. Towards the end add spinach. Combine with cooked pasta. Finish with some goat's milk feta cheese. Pairs well with Rosé!
